It starts with the bun
A soft roll under a caramel-coffee crust, piped on by hand and baked until the top cracks and the inside stays pillowy. It comes out of the oven for your order, not before, and reaches the table warm on its own wooden paddle - plain, or under pistachio, hazelnut, chocolate or cheese. Everything else on this menu grew up around it.
